Ingredients:
- 4 sea bream fillets
- Salt and pepper
- Olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 eggplant, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 2 zucchinis, diced
- 2 tomatoes, chopped
- 2 tablespoons tomato paste
- 1 tablespoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 cup white vinegar
- 2 tablespoons chopped fresh parsley
Instructions:
- Preheat the oven to 400°F (200°C).
- Season the sea bream fillets with salt and pepper.
- In a large oven-safe pan, heat a little bit of olive oil over medium-high heat.
- Add the sea bream fillets to the pan and cook for 3 to 4 minutes on each side, until crispy and golden brown.
- Remove the sea bream fillets from the pan and set aside.
- In the same pan, heat a little more olive oil over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the eggplant, bell peppers, zucchinis, tomatoes, tomato paste, thyme, basil, oregano, and white vinegar.
- Stir to combine and cook for 10 to 15 minutes, or until the vegetables are tender.
- Return the sea bream fillets to the pan, nestling them into the ratatouille.
- Transfer the pan to the oven and bake for 10 to 15 minutes, or until the fish is cooked through.
