Ingredients:

  • 4 sea bream fillets
  • Salt and pepper
  • Olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 eggplant, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 zucchinis, diced
  • 2 tomatoes, chopped
  • 2 tablespoons tomato paste
  • 1 tablespoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 cup white vinegar
  • 2 tablespoons chopped fresh parsley

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Season the sea bream fillets with salt and pepper.
  3. In a large oven-safe pan, heat a little bit of olive oil over medium-high heat.
  4. Add the sea bream fillets to the pan and cook for 3 to 4 minutes on each side, until crispy and golden brown.
  5. Remove the sea bream fillets from the pan and set aside.
  6. In the same pan, heat a little more olive oil over medium heat.
  7. Add the onion and garlic and cook until softened, about 5 minutes.
  8. Add the eggplant, bell peppers, zucchinis, tomatoes, tomato paste, thyme, basil, oregano, and white vinegar.
  9. Stir to combine and cook for 10 to 15 minutes, or until the vegetables are tender.
  10. Return the sea bream fillets to the pan, nestling them into the ratatouille.
  11. Transfer the pan to the oven and bake for 10 to 15 minutes, or until the fish is cooked through.
  12. Sprinkle with chopped parsley and serve. Enjoy!
